Ingredients
  

For the Steak
  • 1 lb sirloin steak
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp garlic salt
  • 1/2 tsp black pepper
  • 1 Tbsp vegetable oil
  • 1 lime, halved
For the Tortas
  • 6 hoagie rolls or bolillo or telera rolls, split open, toasted if desired
  • 1 (15-ounce) can refried beans warmed
  • 1/4 cup mayonnaise
  • 1 1/2 cups shredded montery jack cheese about 6 ounces
  • 2 vine-ripened tomatoes thinly sliced
  • 1 1/2 cups shredded iceberg lettuce
  • as needed sliced avocado, pickled or raw red onions, pickled jalapeños, and hot sauce for serving (optional)

Method
 

  1. Season the sirloin steak with chili powder, cumin, garlic salt, and black pepper. Drizzle with vegetable oil and squeeze lime juice over it.
  2. Cook the steak in a skillet over medium-high heat for about 3-4 minutes per side for medium-rare, or to your desired doneness. Let it rest for a few minutes before slicing thinly.
  3. While the steak rests, spread mayonnaise on the inside of the split hoagie rolls. Warm the refried beans.
  4. Assemble the tortas: Spread refried beans on the bottom half of each roll. Layer with sliced steak, shredded Monterey Jack cheese, sliced tomatoes, and shredded lettuce.
  5. Add optional toppings like avocado, red onions, or jalapeños, and a drizzle of hot sauce if desired. Place the top half of the roll on top.

Notes

This recipe is a base for a delicious steak torta. Feel free to adjust the seasonings on the steak or add your favorite sandwich toppings.
