Ingredients
  

Shrimp
  • 1 pound shrimp raw, large, peeled and deveined with tails attached
Flour Mixture
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper
Egg Wash
  • 2 large eggs
Coconut Panko Coating
  • 3/4 cup shredded unsweetened coconut
  • 1/4 cup panko breadcrumbs
Other
  • Cooking spray
  • Sweet chili sauce for serving

Method
 

  1. Preheat your air fryer to 360°F. Once heated, spray the basket with cooking spray.
  2. In three separate shallow bowls, combine the flour, garlic powder, salt, and pepper in the first. Whisk the eggs in the second. Combine the shredded coconut and panko breadcrumbs in the third.
  3. Dip each shrimp into the flour mixture, shaking off any excess. Then dip into the whisked eggs, and finally dredge into the coconut panko mixture, pressing gently to help it stick.
  4. Place the coated shrimp in the air fryer basket in a single layer, ensuring they do not touch. Spray the tops of the shrimp with cooking spray. Cook for 6 minutes. Flip the shrimp, spray again, and cook for an additional 4-6 minutes, or until golden brown and cooked through.
  5. Season immediately with salt if desired. Serve with sweet chili sauce.
