- In three separate shallow bowls, combine the flour, garlic powder, salt, and pepper in the first. Whisk the eggs in the second. Combine the shredded coconut and panko breadcrumbs in the third.
- Dip each shrimp into the flour mixture, shaking off any excess. Then dip into the whisked eggs, and finally dredge into the coconut panko mixture, pressing gently to help it stick.
- Place the coated shrimp in the air fryer basket in a single layer, ensuring they do not touch. Spray the tops of the shrimp with cooking spray. Cook for 6 minutes. Flip the shrimp, spray again, and cook for an additional 4-6 minutes, or until golden brown and cooked through.
- Season immediately with salt if desired. Serve with sweet chili sauce.
