Air Fryer Stuffed Peppers

Ingredients
  

For the Peppers
  • 4 Bell peppers any color, tops cut off and seeds removed
For the Filling
  • 1 lb Ground beef or turkey
  • 1/2 cup Onion finely chopped
  • 1 clove Garlic minced
  • 1 cup Cooked rice or quinoa
  • 1/2 cup Tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/2 cup Shredded cheese cheddar or mozzarella

Method
 

  1. Prepare the peppers: Cut off the tops of the bell peppers, remove the seeds and membranes. You can blanch them in boiling water for 2-3 minutes if you prefer softer peppers, then pat them dry.
  2. Cook the meat: In a skillet over medium heat, brown the ground beef with the chopped onion and minced garlic. Drain off any excess grease.
  3. Make the filling: In a bowl, combine the cooked meat mixture with the cooked rice, tomato sauce, Italian seasoning, salt, and black pepper. Mix well.
  4. Stuff the peppers: Spoon the filling evenly into each prepared bell pepper.
  5. Air fry the peppers: Place the stuffed peppers in your air fryer basket. Cook at 375°F (190°C) for 15-20 minutes, or until the peppers are tender and the filling is heated through.
  6. Add cheese: In the last 2-3 minutes of cooking, sprinkle the shredded cheese over the top of each pepper and continue to air fry until the cheese is melted and bubbly.
  7. Serve hot.

Notes

You can customize the filling with other vegetables like corn or mushrooms. For a vegetarian option, use lentils or extra beans instead of meat.
