- Prepare the peppers: Cut off the tops of the bell peppers, remove the seeds and membranes. You can blanch them in boiling water for 2-3 minutes if you prefer softer peppers, then pat them dry.
- Cook the meat: In a skillet over medium heat, brown the ground beef with the chopped onion and minced garlic. Drain off any excess grease.
- Make the filling: In a bowl, combine the cooked meat mixture with the cooked rice, tomato sauce, Italian seasoning, salt, and black pepper. Mix well.
- Stuff the peppers: Spoon the filling evenly into each prepared bell pepper.
- Air fry the peppers: Place the stuffed peppers in your air fryer basket. Cook at 375°F (190°C) for 15-20 minutes, or until the peppers are tender and the filling is heated through.
- Add cheese: In the last 2-3 minutes of cooking, sprinkle the shredded cheese over the top of each pepper and continue to air fry until the cheese is melted and bubbly.
- Serve hot.
Notes
You can customize the filling with other vegetables like corn or mushrooms. For a vegetarian option, use lentils or extra beans instead of meat.
