Ingredients
  

For the Oatmeal
  • 2 cups rolled oats not instant
  • 1/4 cup brown sugar packed
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup milk any kind
  • 1/2 cup unsweetened applesauce
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 medium apple peeled, cored, and diced

Method
 

  1. Preheat your oven to 375°F (190°C). Grease an 8x8 inch baking dish.
  2. In a large bowl, combine the rolled oats, brown sugar, baking powder, cinnamon, and salt. Stir to mix.
  3. In a separate bowl, whisk together the milk, applesauce, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the diced apple.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 30-35 minutes, or until the center is set and the top is lightly golden.
  8. Let cool for at least 10 minutes before serving. Serve warm.

Notes

You can add other toppings like nuts or seeds before baking. This baked oatmeal can be stored in the refrigerator for up to 4 days and reheated.
