Bang Bang Ground Turkey Rice Bowls

Ingredients
  

Ground Turkey Mixture
  • 1 lb ground turkey
  • 1 Tbsp sesame oil or favorite cooking oil
  • 2 - garlic cloves minced
  • 2 tsp grated ginger
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 3 Tbsp soy sauce low sodium
  • 1 - sriracha 1-2 Tbsp
  • 2 - chicken broth 2-3 T
  • 2 tsp honey
  • 1/2 tsp black pepper
  • 1/2 tsp sea salt more or less to taste
  • 2 tsp corn starch
Bang Bang Sauce
  • 1/2 c mayonnaise
  • 3 Tbsp sweet chili sauce
  • 1/2 - sriracha 1/2-1 Tbsp, more to kick up the spice
  • 1 tsp rice vinegar
  • 2 tsp honey
Rice Bowl Options
  • 1 serving rice cooked
  • 1 serving shredded carrots
  • 1 serving sliced cucumbers
  • 1 serving shelled edamame
  • 1 serving pickled onions
  • 1 serving avocado sliced
  • 1 serving shredded cabbage
  • 1 serving sliced green onion
  • 1 serving sesame seeds for garnish

Method
 

  1. Prepare the Bang Bang Sauce: Add all of the bang bang sauce ingredients to a small bowl. Whisk well to combine. Adjust flavor by adding more spice with extra sriracha or cutting it a bit with more honey or sweet chili sauce. Chill until ready to serve.
  2. Prepare the Ground Turkey Mixture: Heat sesame oil in a large skillet over medium-high heat until glistening. Add the ground turkey and break it into smaller pieces. Cook until the turkey is browned and reaches an internal temperature of 165°F. Shift the heat to medium-low and add the remaining ingredients, except the cornstarch.
  3. Simmer the mixture for 2 to 3 minutes, stirring occasionally. Sprinkle the corn starch over the top and stir to combine to thicken the mixture. Stir in about 2 tablespoons of the bang bang sauce into the meat just before serving (this step is optional).
  4. Assemble Rice Bowls: Add rice and your chosen vegetables to bowls. Spoon the ground turkey mixture over the top. Drizzle with bang bang sauce and garnish with sliced green onion and sesame seeds.

Notes

Store leftovers separately in an airtight container in the refrigerator. The turkey keeps for about 3 to 4 days, and the sauce lasts up to a week. You can freeze the turkey mixture; toss it in the bang bang sauce before freezing for about 3 months.
If the ground turkey mixture becomes dry, add more soy sauce or broth. The skillet will still be hot when seasoning and liquid are added, which can reduce the liquid quickly. Add an extra splash of liquid as needed.
