- In a mixing bowl, combine BBQ sauce, pineapple juice, soy sauce, honey, minced garlic, and ground ginger. Whisk until well combined.
- Add the chicken cubes to the marinade. Toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken and pineapple chunks onto skewers, alternating between chicken and pineapple.
- Grill the skewers for 15-20 minutes, turning occasionally, until the chicken is cooked through and has grill marks. Baste with any remaining marinade during the last few minutes of grilling.
- Remove from grill and serve hot.
Notes
You can also grill the pineapple chunks separately if you prefer.
