BBQ Pineapple Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts cut into 1-inch cubes
For the Marinade
  • 1/2 cup BBQ sauce
  • 1/4 cup pineapple juice
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 clove garlic minced
  • 1/2 tsp ground ginger
For Grilling
  • 1 cup fresh pineapple chunks

  • Basting brush
  • Mixing bowl

Method
 

  1. In a mixing bowl, combine BBQ sauce, pineapple juice, soy sauce, honey, minced garlic, and ground ginger. Whisk until well combined.
  2. Add the chicken cubes to the marinade. Toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated chicken and pineapple chunks onto skewers, alternating between chicken and pineapple.
  5. Grill the skewers for 15-20 minutes, turning occasionally, until the chicken is cooked through and has grill marks. Baste with any remaining marinade during the last few minutes of grilling.
  6. Remove from grill and serve hot.

Notes

You can also grill the pineapple chunks separately if you prefer.
