Ingredients
  

For the Crust
  • 13.8 ounce tube refrigerated pizza crust
  • 2 Tablespoons olive oil
For the Eggs
  • 8 large eggs
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • cup milk
  • 2 Tablespoons salted butter
For the Topping
  • 15 ounce can Libbys Country Sausage Gravy
  • 2 cups shredded Colby jack cheese
  • ½ cup real bacon pieces

Method
 

  1. Preheat your oven to 425F degrees. Spray a large baking sheet (10"x 15") with nonstick cooking spray.
  2. Spread the pizza crust onto the prepared baking sheet. Stretch it to the edges. Brush olive oil evenly over the crust. Poke the crust with a fork to prevent puffing.
  3. Bake the crust for about 7 minutes on the middle rack until it just begins to turn light brown.
  4. While the crust bakes, prepare the scrambled eggs. In a medium bowl, combine the eggs, salt, pepper, and milk. Whisk well for at least 2 minutes.
  5. Preheat a pan over low to medium heat. Add butter. Once melted, pour in the egg mixture. Gently scramble the eggs slowly until softly scrambled and fluffy. Turn off the heat.
  6. Remove the crust from the oven. Spread the sausage gravy evenly over the crust.
  7. Top the gravy with the scrambled eggs. Then, add the shredded cheese, followed by the bacon pieces.
  8. Return the baking pan to the oven (middle rack) and cook for another 6-7 minutes, until everything is warmed through and the cheese is melted.
  9. Slice into 12 slices and serve warm.
