- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, minced garlic, oregano, salt, and pepper.
- Place the chicken breasts in a baking dish and pour the olive oil mixture over them, ensuring they are evenly coated.
- Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- While the chicken is baking, prepare the bruschetta topping. In a medium bowl, combine the halved cherry tomatoes, chopped red onion, and chopped basil.
- Once the chicken is cooked, remove it from the oven. Spoon the bruschetta topping over each chicken breast.
- Drizzle with balsamic glaze before serving.
