Bruschetta Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 ounces each
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Bruschetta Topping
  • 2 cups cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh basil leaves chopped
  • 2 tablespoons balsamic glaze

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, minced garlic, oregano, salt, and pepper.
  3. Place the chicken breasts in a baking dish and pour the olive oil mixture over them, ensuring they are evenly coated.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  5. While the chicken is baking, prepare the bruschetta topping. In a medium bowl, combine the halved cherry tomatoes, chopped red onion, and chopped basil.
  6. Once the chicken is cooked, remove it from the oven. Spoon the bruschetta topping over each chicken breast.
  7. Drizzle with balsamic glaze before serving.

Notes

Serve immediately. This dish pairs well with a side salad or roasted vegetables.
