Cajun Shrimp Tacos With Slaw

Ingredients
  

For the Shrimp
  • 1 pound large shrimp peeled and deveined, tails removed
  • 2 tablespoons butter
  • 1 tablespoon honey
  • 2 teaspoons Cajun seasoning see note for DIY
For the Slaw
  • 3 cups cabbage slaw
  • 1 tablespoon lime juice about 1 lime
  • 1/4 cup mayonnaise
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cup cilantro chopped
For Assembly
  • 8 6-inch flour or corn tortillas

  • Mixing bowl

Method
 

  1. Prepare the slaw: Stir together mayonnaise, lime juice, salt, sugar, and cilantro in a mixing bowl. Pour over cabbage slaw and toss to combine. Cover and chill until ready to use.
  2. Prepare the shrimp: In a large skillet over medium heat, melt butter. Stir in honey and Cajun seasoning.
  3. Add shrimp and stir over medium heat for 3-5 minutes until opaque.
  4. Assemble tacos by filling tortillas with shrimp and topping with creamy cabbage slaw. Serve immediately.

Notes

This recipe is easily adaptable. For a DIY Cajun seasoning, combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, and dried thyme.
