  • 1/2 onion diced
  • 1 lb lean ground beef
  • 2 tsp garlic powder
  • 3 tbsp all-purpose flour
  • 1 tbsp paprika
  • 1/4 cup dry sherry or beef broth
  • 3 cups low sodium beef broth
  • 1 cup milk
  • 1.5 tsp salt
  • 1/2 tsp black pepper
  • 2 cups dry rotini noodles
  • 2 cups shredded sharp cheddar cheese

Method
 

  1. Cook the ground beef and diced onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain any excess grease.
  2. Stir in the garlic powder and paprika. Cook for one minute until fragrant.
  3. Sprinkle the flour over the meat mixture and stir well to coat. Cook for one minute.
  4. Pour in the sherry (or beef broth) and scrape up any browned bits from the bottom of the skillet. Let it bubble for one minute.
  5. Add the beef broth, milk, salt, and pepper. Bring the mixture to a simmer.
  6. Stir in the dry rotini noodles. Cover the skillet, reduce the heat to low, and cook for 10 to 12 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  7. Remove the skillet from the heat. Stir in the shredded cheddar cheese until it melts and the sauce thickens.
  8. Serve immediately directly from the skillet.
