- Preheat your oven to 375 degrees F (190 degrees C). Slice each chicken breast crosswise to create thinner cutlets, resulting in 4 thin pieces. Place the chicken in a glass baking dish, season with salt and pepper, and drizzle with olive oil. Roast for 20-25 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C).
- While the chicken bakes, prepare the chipotle mayonnaise. Dice the chipotle peppers. In a small bowl, combine the mayonnaise, lime juice, and diced peppers. Season with salt and pepper to your liking. Set aside.
- Heat a griddle or skillet over medium heat. Slice the bread into 8 thick slices, about 1/2 inch thick. Spread one side of each bread slice with softened butter or mayonnaise.
- Assemble the sandwiches. Spread the chipotle mayonnaise onto the unbuttered side of each bread slice. Layer with grated cheddar cheese, sliced avocados, the cooked chicken, and 2 slices of American cheese. Top with another slice of bread.
- Grill the sandwiches on the prepared griddle or skillet for 3-4 minutes per side, or until the bread is golden brown and the cheese is fully melted.
Notes
This sandwich is best served immediately while the cheese is melted and gooey. You can adjust the amount of chipotle peppers to control the spice level.
