Method
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add butter to the same skillet. Add mushrooms and cook until browned, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2-3 minutes.
- Reduce heat to low. Stir in heavy cream. Cook, stirring occasionally, until the sauce has thickened slightly, about 3-5 minutes.
- Return the chicken breasts to the skillet and spoon the sauce over them. Heat through for 1-2 minutes.
- Garnish with fresh parsley before serving.
