Chicken Breast with Creamy Mushroom Skillet Sauce

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts pounded to 1/2-inch thickness
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
For the Creamy Mushroom Sauce
  • 8 oz sliced mushrooms cremini or white button
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Add butter to the same skillet. Add mushrooms and cook until browned, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2-3 minutes.
  5. Reduce heat to low. Stir in heavy cream. Cook, stirring occasionally, until the sauce has thickened slightly, about 3-5 minutes.
  6. Return the chicken breasts to the skillet and spoon the sauce over them. Heat through for 1-2 minutes.
  7. Garnish with fresh parsley before serving.

Notes

Serve this chicken with your favorite side dishes, such as mashed potatoes, rice, or a simple green salad.
