Ingredients

For the Crust
  • 1.5 cups crushed chocolate graham crackers
  • 6 tablespoons butter, softened
For the Cheesecake Filling
  • 2 ounces semisweet chocolate, chopped
  • 2 packages cream cheese, softened 8 ounce each
  • 1/2 cup white sugar
  • 1/2 teaspoon vanilla extract
  • 2 eggs

Equipment

  • 9-inch springform pan
  • Medium bowl
  • Large Bowl
  • Microwave-safe bowl

Method

  1. Preheat your oven to 325 degrees F (165 degrees C).
  2. Combine graham cracker crumbs and butter in a medium bowl; mix well. Press the mixture into the bottom of a 9-inch springform pan.
  3. Bake the crust in the preheated oven for 10 minutes. Set it aside.
  4. Place the chopped chocolate in a microwave-safe bowl; heat it in the microwave until melted, stirring occasionally until the chocolate is smooth.
  5. Beat the softened cream cheese, sugar, and vanilla in a large bowl until creamy and smooth. Blend in the eggs, adding them one at a time.
  6. Remove 1 cup of the plain cream cheese mixture and mix it with the melted chocolate.
  7. Spread the plain batter into the baked crust. Drop the chocolate batter randomly over the top. Swirl the batter with the tip of a knife to create a marbled effect.
  8. Bake in the preheated oven until the center is set, which takes 30 to 35 minutes. Cool the cheesecake to room temperature, then refrigerate it for 3 hours to overnight before serving.

Notes

This cheesecake requires chilling time to set properly before you slice and serve it. The marbled pattern looks best when you use a light hand when swirling the knife.
