Ingredients

For the Clusters
  • 1 cup Greek yogurt
  • 2 scoops Whey protein isolate optional, any flavor or sweetener
  • 1 cup Strawberries chopped into small chunks
For the Chocolate Coating
  • 1 cup Sugar-free dark chocolate chips melted (150-170g per cup)
  • 1 tbsp Coconut oil optional, to thin the chocolate

Equipment

  • Bowl
  • Tray
  • Parchment paper
  • Saucepan or microwave-safe bowl

Method

  1. In a bowl, combine Greek yogurt and protein powder (if using). Stir until smooth.
  2. Gently fold in the chopped strawberries, making sure they are evenly coated.
  3. Line a tray with parchment paper. Drop spoonfuls of the mixture onto the tray, keeping them chunky.
  4. Place the tray in the freezer for 2 to 3 hours until the clusters are firm.
  5. Melt the dark chocolate with coconut oil (if using). Once the clusters are frozen, dip each one into the chocolate or drizzle generously over the top.
  6. Place back in the freezer for 10 to 15 minutes until the chocolate sets. Eat straight from the freezer.

Notes

You can use your favorite yogurt. Flavored whey protein isolate can add flavor and sweetness. Use your preferred sweetener, preferably in syrup or powdered form. Fresh or frozen berries work; any berry is suitable. For a different taste, try low-carb nuts or seeds instead of berries. ChocZero Dark Chocolate was used for the nutritional calculation, but other brands may vary. You can add nuts, coconut, or seeds for extra texture. Store in an airtight container in the freezer for up to 2 weeks.
