  • 1/2 cup butter softened
  • 2/3 cup white sugar
  • 1 egg
  • 1 egg white
  • 1/4 tsp vanilla extract
  • 1 2/3 cup all-purpose flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt

Method
 

  1. If you have a stand mixer, cream together the softened butter and white sugar until well combined. Add the egg and vanilla extract, then stir until fully incorporated.
  2. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a cohesive dough forms.
  3. Wrap the dough tightly in plastic wrap. Chill in the refrigerator for at least 1 hour, or preferably overnight, until firm.
  4. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line baking sheets with parchment paper.
  5. On a lightly floured surface, roll out the chilled dough to about 1/4 inch thickness. Use your desired cookie cutters to shape the dough into clock faces or other festive shapes.
  6. Place the shaped cookies onto the prepared baking sheets, leaving some space between them. Bake for 7-8 minutes, or until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Decorate as desired once fully cooled.

Notes

These cookies are a base for decoration. You can use royal icing to draw clock hands and numbers, or other fun designs to count down to an event. For a keto version, consider using a keto-friendly sweetener and flour blend.
