Ingredients

For the Mousse
  • 1 cup 2% cottage cheese
  • cup milk chocolate chips
  • 1 tbsp cocoa powder

Equipment

  • Microwave-safe dish
  • Food processor or high-speed blender
  • Spatula

Method

  1. Place the chocolate chips in a microwave-safe dish. Microwave in 20-30 second intervals, stirring between each, until fully melted.
  2. Add the cottage cheese, melted chocolate, and cocoa powder to a food processor or high-speed blender. Blend on high for 20-30 seconds. Scrape down the sides with a spatula, then blend again until smooth.
  3. Pour the mousse into a serving dish or divide it into smaller individual dishes. You can serve it immediately or chill it in the refrigerator for 30 minutes for a creamier, thicker texture.
  4. Serve with whipped cream, shaved chocolate, or your favorite fruit.

Notes

Substitutions: You can use lower or higher fat cottage cheese. Semi-sweet or dark chocolate chips can be used instead of milk chocolate. For added sweetness, consider adding 1 teaspoon of maple syrup or honey. A splash of vanilla extract can enhance the flavor.
Dietary Considerations: This mousse is naturally gluten-free (use gluten-free chocolate chips), nut-free, and vegetarian. For a lactose-free version, use lactose-free cottage cheese and dairy-free chocolate chips.
