Method
- Place chicken pieces, chicken broth, thyme, salt, and pepper in your slow cooker. Stir to combine.
- Cover and cook on low for 4 hours or on high for 2 hours, until the chicken is cooked through.
- While the chicken cooks, prepare the dumpling dough. In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate small bowl, combine the milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Once the chicken is cooked, bring the liquid in the slow cooker to a simmer over medium heat on the stovetop (if your slow cooker has a stovetop-safe insert, otherwise transfer to a pot). Drop spoonfuls of the dumpling dough onto the simmering liquid.
- Cover the pot and let the dumplings steam for 15-20 minutes, or until they are cooked through and fluffy. Do not lift the lid while they are steaming.
- Serve the chicken and dumplings hot.

Notes
You can add chopped carrots or celery along with the chicken for extra vegetables. For a creamier sauce, stir in a tablespoon of cornstarch mixed with a little water before adding the dumplings.
