Ingredients
  

For the Chicken
  • 1.5 pounds boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
For the Dumplings
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.75 cup milk
  • 2 tablespoons butter melted

Method
 

  1. Place chicken pieces, chicken broth, thyme, salt, and pepper in your slow cooker. Stir to combine.
  2. Cover and cook on low for 4 hours or on high for 2 hours, until the chicken is cooked through.
  3. While the chicken cooks, prepare the dumpling dough. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a separate small bowl, combine the milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Once the chicken is cooked, bring the liquid in the slow cooker to a simmer over medium heat on the stovetop (if your slow cooker has a stovetop-safe insert, otherwise transfer to a pot). Drop spoonfuls of the dumpling dough onto the simmering liquid.
  6. Cover the pot and let the dumplings steam for 15-20 minutes, or until they are cooked through and fluffy. Do not lift the lid while they are steaming.
  7. Serve the chicken and dumplings hot.

Notes

You can add chopped carrots or celery along with the chicken for extra vegetables. For a creamier sauce, stir in a tablespoon of cornstarch mixed with a little water before adding the dumplings.
