  • Small baking dish or pie plate
  • Parchment paper

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, combine the cranberry sauce, brown sugar, vanilla extract, orange zest, and nutmeg. Stir until well mixed.
  3. Place the cold brie cheese round in a small baking dish or pie plate if you plan to serve it directly from the dish. If you intend to move the cheese to a serving platter after baking, line your chosen serving dish with parchment paper.
  4. Spoon the prepared cranberry mixture evenly over the top of the brie. Sprinkle the chopped nuts over the cranberry mixture. If using, place one sprig of fresh rosemary on top.
  5. Bake for 8 to 15 minutes, or until the cheese is soft when gently pressed. Avoid overbaking; the cheese should not be completely melted or oozing out.
  6. If you baked the brie in a separate dish, carefully lift the parchment paper and use a spatula to slide the cheese onto your serving dish. Remove the baked rosemary sprig and garnish with a fresh sprig of rosemary, if desired.
  7. Serve immediately with your choice of crackers or crostini.

Notes

These Cranberry Brie Bites are best served warm. You can prepare the cranberry mixture ahead of time and store it in the refrigerator. For a different flavor profile, consider adding a pinch of cinnamon or ginger to the cranberry mixture.
