Ingredients
  

For the Pasta and Sauce
  • 10 oz chickpea flour pasta or any high-protein pasta
  • 1 tablespoon olive oil
  • 1 medium onion finely diced
  • 1 medium green bell pepper finely diced
  • 1 pound lean ground beef 450 g
  • 4 cloves garlic crushed
  • 1 tablespoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons tomato paste
  • 1 cup tomato sauce passata, 250 g
  • ½ cup light cream cheese 125 g
  • ½ cup light sour cream 125 g
  • 6-8 fresh basil leaves torn

Method
 

  1. Boil a large pot of salted water and cook the pasta according to package instructions. Reserve 1-2 cups of pasta water, then drain the pasta and set it aside.
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and green bell pepper. Cook for 3-4 minutes until softened.
  3. Add the ground beef to the skillet. Cook until browned, breaking it apart. Add the crushed garlic, oregano, paprika, salt, and black pepper. Cook for another minute.
  4. Mix in the tomato paste and tomato sauce. Simmer for about 5 minutes.
  5. Stir in the cream cheese and sour cream until smooth and creamy. Heat through.
  6. Add the cooked pasta to the skillet and toss to coat with the sauce. Add a splash of reserved pasta water if the sauce is too thick.
  7. Sprinkle the torn basil leaves over the pasta. Adjust seasoning to taste and serve hot.
