Method
- Season the chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in the heavy cream, Parmesan cheese, sun-dried tomatoes, and Italian seasoning. Bring to a simmer and cook for 3-5 minutes, until the sauce thickens slightly.
- Add the cooked chicken back to the skillet. Stir in the spinach and cook until wilted, about 1-2 minutes.
- Serve immediately.
Notes
This dish is great served over pasta, rice, or with crusty bread.
