Creamy Tuscan Chicken

A quick and easy chicken dish with a rich, creamy sauce.

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
For the Sauce
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1/2 cup sun-dried tomatoes oil-packed, drained and chopped
  • 1/4 cup fresh spinach chopped
  • 1 tsp Italian seasoning

  • Large skillet
  • Tongs

Method
 

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
  5. Stir in the heavy cream, Parmesan cheese, sun-dried tomatoes, and Italian seasoning. Bring to a simmer and cook for 3-5 minutes, until the sauce thickens slightly.
  6. Add the cooked chicken back to the skillet. Stir in the spinach and cook until wilted, about 1-2 minutes.
  7. Serve immediately.

Notes

This dish is great served over pasta, rice, or with crusty bread.
