Crispy Baked Garlic Chicken Thighs

Ingredients
  

  • 700 g skinless boneless chicken thighs 5 to 6 thighs
  • 1 tsp garlic powder
  • 1 tsp Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/2 cup dry white wine or broth or water
  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • Parsley finely chopped, optional garnish

Method
 

  1. Sprinkle both sides of the chicken with garlic powder, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium heat. Place the chicken in the skillet, smooth side down.
  3. Press down lightly with a spatula. Cook for 5 minutes until deep golden and crispy.
  4. Turn the chicken and press lightly with the spatula. Cook for 2 minutes. Add the minced garlic and butter. Cook for 1 minute until the garlic is light golden and fragrant.
  5. Add the wine, then turn up the heat. Stir around the chicken to dissolve the browned bits stuck on the skillet into the wine. Simmer rapidly for 1 1/2 minutes or until the alcohol smell evaporates.
  6. Remove the skillet from the heat. Serve the chicken with the sauce.

Notes

If you use chicken breast instead of thighs, the crust will be less golden. Cut the breast in half horizontally to make them 1cm thick. Heat the skillet on high, cook for 2 minutes, flip, cook for 1 minute, then add garlic and butter. Proceed with the recipe as written from that point.
