- In a mixing bowl, whisk together the flour and salt if you are using it.
- Add the eggs and milk to the dry ingredients. Whisk until the batter is just combined. Do not overmix; a few small lumps are acceptable.
- Heat a griddle or large skillet over medium heat. Lightly grease the surface if needed.
- Pour about 1/4 cup of batter onto the hot surface for each pancake.
- Cook for 2 to 3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the second side until golden brown.
- Serve the pancakes immediately with your preferred toppings.
Notes
If you want a slightly sweeter flavor without adding more ingredients, you can substitute the milk with buttermilk. For a thicker batter, reduce the milk slightly. This recipe is easy to double or triple for larger groups.
