Pancake Batter
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup milk
  • 1/4 tsp salt Optional, for flavor

Method
 

  1. In a mixing bowl, whisk together the flour and salt if you are using it.
  2. Add the eggs and milk to the dry ingredients. Whisk until the batter is just combined. Do not overmix; a few small lumps are acceptable.
  3. Heat a griddle or large skillet over medium heat. Lightly grease the surface if needed.
  4. Pour about 1/4 cup of batter onto the hot surface for each pancake.
  5. Cook for 2 to 3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the second side until golden brown.
  6. Serve the pancakes immediately with your preferred toppings.

Notes

If you want a slightly sweeter flavor without adding more ingredients, you can substitute the milk with buttermilk. For a thicker batter, reduce the milk slightly. This recipe is easy to double or triple for larger groups.
