Easy Baked Churro Bites

Ingredients
  

For the Churros
  • 230 ml cold water
  • 120 g unsalted butter
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp soft brown sugar
  • 160 g plain flour all-purpose
  • 3 medium eggs
  • 240 ml boiling water for steam
For Coating and Serving
  • 200 g caster sugar superfine sugar
  • 2 tsp ground cinnamon
  • 3 tbsp melted butter
  • 200 g white chocolate broken into pieces
  • 5 heaped tbsp dessicated coconut shredded coconut

Method
 

  1. Preheat your oven to 200C/400F (fan). Line two baking sheets with silicon baking mats or parchment paper.
  2. In a saucepan, combine the cold water, butter, salt, vanilla extract, and brown sugar. Bring to a boil and simmer for 1-2 minutes until the sugar dissolves.
  3. Reduce the heat to low. Stir in the flour with a wooden spoon until it forms a dough that pulls away from the sides of the pan. Turn off the heat.
  4. Stir in the eggs one at a time with the wooden spoon until just combined. Avoid over-stirring.
  5. Transfer the dough to a piping bag fitted with a large star tip (like Wilton #1M).
  6. Pipe rows of dough, about 8-10cm long, onto the prepared baking sheets. Leave 2-3cm between each churro as they will expand.
  7. Pour 1 cup of boiling water into a separate oven-safe tray and place it on the bottom rack of your oven. This steam will help keep the churros soft inside while crisping the outside.
  8. Place the trays of churros in the oven and bake for 20-25 minutes, or until golden brown.
  9. While the churros bake, melt the white chocolate. You can do this over a bain-marie or in the microwave in 30-second intervals, stirring between each. Spoon the melted chocolate into a small serving bowl. Place the dessicated coconut in another small bowl.
  10. On a large plate, mix together the caster sugar and ground cinnamon.
  11. Remove the churros from the oven. Brush them with the melted butter, then roll them in the cinnamon sugar mixture.
  12. Serve your Easy Baked Churro Bites with the melted white chocolate and coconut for dipping.

Notes

These churro bites are best enjoyed fresh. You can prepare the dough ahead of time and pipe them just before baking for the crispiest results.
