Easy BBQ Chicken Bowls

Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 1/2 cup BBQ sauce plus more for serving
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
For the Bowls
  • 2 cups cooked rice
  • 1 cup canned black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro

  • Baking sheet
  • Small bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine the chicken pieces, BBQ sauce, smoked paprika, garlic powder, salt, and pepper. Toss to coat the chicken evenly.
  3. Spread the coated chicken in a single layer on the prepared baking sheet.
  4. Bake for 15-20 minutes, or until the chicken is cooked through and slightly caramelized.
  5. Assemble the bowls: Divide the cooked rice among four bowls. Top with the baked BBQ chicken, black beans, corn, shredded cheese, and chopped cilantro.
  6. Serve immediately with extra BBQ sauce if desired.

Notes

You can substitute chicken thighs for chicken breasts. Adjust baking time as needed. Feel free to add other toppings like avocado, sour cream, or red onion.
