Easy Beef Taco Casserole

Ingredients
  

Casserole Base
  • 1 pound extra lean ground beef 90% lean
  • 10.75 ounces Condensed Tomato Soup Campbell’s
  • 1 cup Picante Sauce Pace
  • 1/2 cup water
  • 2 teaspoons chili powder
  • 8 corn tortillas tortillas 6-inch, cut into 1-inch pieces (or 6 flour tortillas)
Topping
  • 1 cup shredded Cheddar cheese or Monterey Jack cheese About 4 ounces, divided

  • 9-inch pie plate or 1-quart baking dish

Method
 

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9-inch pie plate or 1-quart baking dish.
  2. Cook the ground beef in a skillet over medium heat until browned. Drain off any fat.
  3. Stir the tomato soup, picante sauce, water, and chili powder into the cooked beef in the skillet. Heat the mixture through.
  4. Layer half of the cut tortillas in the bottom of the prepared baking dish.
  5. Spoon half of the beef mixture over the first layer of tortillas. Sprinkle with half of the shredded cheese.
  6. Repeat the layers: remaining tortillas, remaining beef mixture, and the rest of the cheese.
  7. Bake for 25 minutes, or until the casserole is bubbly and the cheese is melted.

Notes

You can substitute the corn tortillas with flour tortillas if you prefer. For a lower-carb option, you can reduce the amount of tortillas used or omit them entirely, increasing the meat and sauce mixture slightly.
