Easy Beef Taco Skillet

Ingredients
  

For the Skillet
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 1 can black beans 15 ounce, rinsed and drained
  • 1 cup beef broth
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese

  • sour cream
  • salsa
  • chopped cilantro

Method
 

  1. In a large skillet over medium-high heat, cook the ground beef, breaking it apart with a spatula, until browned. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the diced tomatoes (undrained), rinsed black beans, beef broth, and taco seasoning to the skillet. Stir to combine.
  5. Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 10 minutes, stirring occasionally, until the flavors have melded and the sauce has thickened slightly.
  6. Stir in the shredded cheddar cheese until melted and combined.
  7. Serve hot, with your favorite optional toppings like sour cream, salsa, or cilantro.

Notes

This recipe is very versatile. You can add corn, bell peppers, or other vegetables you have on hand. For a spicier dish, add a pinch of cayenne pepper or some diced jalapeños with the onions.
