Ingredients
  

For the Burritos
  • 3 cups grilled chicken, diced approximately 4 tenderloins or 2 small chicken breasts
  • 2 each burrito tortillas
  • 1/3 cup diced tomatoes
  • 4 tablespoon chipotle ranch sauce or flamethrower sauce
  • 1/2 each diced avocado approximately 1/3 of a cup
  • 2/3 cup shredded lettuce
  • 1/3 cup shredded cheddar cheese
  • 1/4 cup crushed tortilla chips or fiesta strips

Method
 

  1. Grill chicken as desired, dice, and set aside. You can also use leftover or rotisserie chicken.
  2. Dice all other ingredients while the chicken cooks.
  3. Add everything except the tortillas to a large bowl and mix well, ensuring everything is coated in the sauce.
  4. Heat a pan over medium heat with a little oil. Place half of the mixture in each tortilla. Fold opposite sides in and roll the tortilla around the filling tightly. Keep them seam side down to prevent unrolling.
  5. When the pan is hot, place a little cheese in the inside seam of the tortilla. Gently transfer to the hot pan, seam side down. Cook for 1-2 minutes or until golden brown on each side. You can gently press the top of the burrito to flatten it.

Notes

Any leftover or frozen cooked chicken can be used, including rotisserie chicken. You can use a store-bought chipotle ranch or creamy chipotle sauce in place of homemade flamethrower sauce.
