  • 2 pounds red potatoes halved
  • 1 tablespoon vegetable oil or as needed
For the Coating
  • 1 teaspoon vegetable oil or as needed
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper
For Serving (Optional)
  • 1/4 cup sour cream Optional

Method
 

  1. Preheat your oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray. Pour about 1 teaspoon vegetable oil into the pan to coat the bottom.
  2. Mix Parmesan cheese, salt, garlic powder, paprika, and pepper together in a bowl.
  3. Blot the cut-side of the potatoes dry with a paper towel to remove moisture.
  4. Place the potatoes in a separate bowl. Drizzle with 1 tablespoon vegetable oil and toss until the potatoes are lightly coated. Sprinkle the potatoes with the Parmesan mixture and toss again to coat them evenly.
  5. Arrange the potatoes cut-side down on the prepared baking pan.
  6. Bake in the preheated oven for 15 to 20 minutes. Flip the potatoes and continue baking until they are golden and crispy, which takes another 15 to 20 minutes.
  7. Serve hot with sour cream, if desired.

Notes
