Method
- Cook pasta according to package directions. Drain and set aside.
- While pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Add chopped artichoke hearts to the skillet and cook for 2-3 minutes.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Pour in the heavy cream and bring to a simmer. Cook for 5 minutes, stirring occasionally, until the sauce thickens slightly.
- Reduce heat to low and stir in the grated Parmesan cheese, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
- Add the cooked pasta to the skillet with the sauce. Toss to coat evenly.
- Serve immediately.
Notes
You can add cooked chicken or shrimp for a heartier meal. A pinch of red pepper flakes can add a little heat.
