Easy Spinach Artichoke Pasta

Ingredients
  

For the Pasta
  • 12 oz Pasta such as penne or rotini
For the Sauce
  • 1 tbsp Olive oil
  • 2 cloves Garlic minced
  • 1 can Artichoke hearts 14 oz, drained and chopped
  • 5 oz Fresh spinach
  • 1.5 cups Heavy cream
  • 1 cup Parmesan cheese grated
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Equipment

  • Large pot
  • colander
  • Large skillet

Method
 

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  3. Add chopped artichoke hearts to the skillet and cook for 2-3 minutes.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  5. Pour in the heavy cream and bring to a simmer. Cook for 5 minutes, stirring occasionally, until the sauce thickens slightly.
  6. Reduce heat to low and stir in the grated Parmesan cheese, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
  7. Add the cooked pasta to the skillet with the sauce. Toss to coat evenly.
  8. Serve immediately.

Notes

You can add cooked chicken or shrimp for a heartier meal. A pinch of red pepper flakes can add a little heat.
