Ingredients
  

For the Cinnamon Chips
  • 6 small flour tortillas cut into wedges
  • 2 tablespoons melted butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
For the Peach Salsa
  • 3 cups fresh peaches peeled, pitted, and diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine the melted butter, granulated sugar, and ground cinnamon. Brush this mixture evenly over the tortilla wedges.
  3. Arrange the tortilla wedges in a single layer on the prepared baking sheet. Bake for 8-10 minutes, or until golden brown and crisp. Let them cool.
  4. In a large bowl, combine the diced peaches, chopped red onion, chopped cilantro, minced jalapeno, lime juice, and salt.
  5. Gently toss all the salsa ingredients together to combine. Taste and adjust seasoning if needed.
  6. Serve the fresh peach salsa with the cooled cinnamon chips.

Notes

You can adjust the amount of jalapeno to control the spice level. If fresh peaches are not in season, you can use frozen peaches that have been thawed and drained.
