Ingredients
  

For the Garlic Butter
  • 4 tablespoon softened unsalted butter
  • 1 tablespoon mayonnaise
  • 3 cloves garlic, very finely minced
  • 1 tablespoon finely chopped Italian parsley
  • Salt and pepper to taste
For the Sandwich
  • 4 slices sandwich bread sourdough with soft crust recommended
  • 1 cup freshly shredded cheese Gruyere, Colby Jack, and smoked Cheddar recommended

Method
 

  1. In a bowl, mix the softened butter, mayonnaise, garlic, and parsley until evenly combined. Season with a pinch of salt and pepper to taste.
  2. Spread the garlic butter mixture on one side of each bread slice. Top two slices with shredded cheese and cover with the remaining bread slices, buttered side up.
  3. Heat a nonstick skillet over medium-low heat. This allows the cheese to melt fully before the bread burns.
  4. Cook the sandwiches for about 5 minutes per side, until golden brown and the cheese is melted. You may need to flip them a few times and gently press them down to ensure even cooking and melting.
  5. Slice and serve immediately.

Notes

For best results, freshly grate your cheese. Pre-packaged cheese slices that melt well, like American or Colby Jack, can also be used. Cooking over medium-low heat is crucial to prevent the exterior from burning before the cheese melts. Flipping and gently pressing the sandwiches ensures even heat distribution and melting. Use a non-stick skillet or griddle to prevent sticking.
Variations include using Swiss, Monterey Jack, Havarti, Gouda, or Muenster cheese. Brioche or sourdough bread can be used instead of standard sandwich bread. Add-ins like roasted garlic cloves, deli meat, caramelized onions, or sliced apples can also be included.
