For the Broccoli
  • 1 pound broccoli florets cut into bite-sized
  • 1 tablespoon vegetable oil
For the Shrimp and Sauce
  • 3 tablespoons tamari or soy sauce
  • 1 tablespoon fresh ginger grated or minced
  • 1 tablespoon sambal or Asian chili-garlic sauce
  • 2 teaspoons toasted sesame oil
  • 1 pound medium shrimp uncooked peeled and deveined
  • Salt to taste
  • Freshly ground black pepper to taste
For Serving
  • Cooked white or brown rice
  • 1/4 cup scallions thinly sliced

Method
 

  1. Preheat your oven to 400°F (200°C). Arrange a rack in the middle of the oven.
  2. Place the broccoli florets on a rimmed baking sheet. Drizzle with vegetable oil and toss to coat evenly. Spread the broccoli in a single layer and roast for 10 minutes.
  3. While the broccoli roasts, whisk together the tamari or soy sauce, ginger, chili-garlic paste, and toasted sesame oil in a small bowl. Set aside. Season the shrimp with salt and pepper.
  4. Add the seasoned shrimp and the prepared sauce mixture to the baking sheet with the broccoli. Toss everything together and spread back into an even layer. Roast for another 6 to 8 minutes, stirring halfway through, until the shrimp are just opaque and the broccoli is tender.
  5. Serve the garlic butter shrimp and broccoli over cooked rice. Sprinkle with sliced scallions before serving.
