Method
- Preheat your oven to 400°F (200°C). Lightly coat a baking sheet with cooking spray.
- In a large bowl, combine the halved red potatoes with 1 tablespoon of vegetable oil. Toss to coat the potatoes evenly.
- Spread the potatoes in a single layer on the prepared baking sheet.
- Roast for 20 minutes. While the potatoes roast, mix the remaining 1 teaspoon of vegetable oil with the Parmesan cheese, salt, garlic powder, paprika, and black pepper in the same bowl you used for the potatoes.
- Remove the potatoes from the oven. Sprinkle the seasoned Parmesan mixture over the hot potatoes and toss gently to coat them.
- Return the potatoes to the oven and roast for another 10 minutes, or until they are tender and the cheese is slightly browned.
- Serve immediately. If you wish, top with a dollop of sour cream per serving.
Notes
You can substitute russet potatoes for red potatoes, but the texture will be slightly different. For a crispier potato, you can increase the roasting time slightly, watching carefully to prevent burning the cheese.
