Garlic Parmesan Roasted Red Potatoes

These roasted red potatoes are seasoned with Parmesan cheese, garlic powder, salt, and pepper. They offer a flavorful side dish that complements many main courses.

Ingredients
  

For the Potatoes
  • 2 pounds red potatoes halved
  • 1 tablespoon vegetable oil or as needed
  • 1 teaspoon vegetable oil or as needed
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper
Optional Topping
  • 1/4 cup sour cream Optional

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly coat a baking sheet with cooking spray.
  2. In a large bowl, combine the halved red potatoes with 1 tablespoon of vegetable oil. Toss to coat the potatoes evenly.
  3. Spread the potatoes in a single layer on the prepared baking sheet.
  4. Roast for 20 minutes. While the potatoes roast, mix the remaining 1 teaspoon of vegetable oil with the Parmesan cheese, salt, garlic powder, paprika, and black pepper in the same bowl you used for the potatoes.
  5. Remove the potatoes from the oven. Sprinkle the seasoned Parmesan mixture over the hot potatoes and toss gently to coat them.
  6. Return the potatoes to the oven and roast for another 10 minutes, or until they are tender and the cheese is slightly browned.
  7. Serve immediately. If you wish, top with a dollop of sour cream per serving.

Notes

You can substitute russet potatoes for red potatoes, but the texture will be slightly different. For a crispier potato, you can increase the roasting time slightly, watching carefully to prevent burning the cheese.
