- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the chicken pieces and potato cubes. Drizzle with olive oil and sprinkle with the ranch seasoning mix, garlic powder, and black pepper. Toss everything together until the chicken and potatoes are evenly coated.
- Spread the coated chicken and potatoes in a single layer on the prepared baking sheet. Make sure not to overcrowd the pan; use two sheets if necessary.
- Bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender and slightly browned. Flip the chicken and potatoes halfway through the baking time for even cooking.
- Serve hot and enjoy your garlic ranch chicken and potatoes.
Notes
For extra flavor, you can add chopped fresh parsley or a sprinkle of shredded cheese before serving. If you don't have ranch seasoning mix, you can create your own blend with dried dill, parsley, garlic powder, onion powder, and a pinch of salt.
