Ghost Mozzarella Bites with Marinara

These ghost mozzarella bites are a fun and festive Halloween finger food. They are keto-friendly and easy to make for parties.

Ingredients
  

For the Ghost Mozzarella
  • 8 ounce package sliced fresh mozzarella cheese
For the Caprese Topping
  • 1 loaf French bread cut diagonally into half-inch slices
  • 1/4 cup olive oil divided
  • 2 teaspoons Balsamic vinegar
  • 1/4 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/4 teaspoon Kosher salt
  • 1/2 teaspoon Italian seasoning
  • 1/8 teaspoon black pepper
  • 1 pint grape tomatoes diced (10 ounces)
  • 10 leaves Basil cut into thin strips
For Serving
  • Balsamic glaze for drizzling and filling eyes/mouths

Method
 

  1. Preheat your oven to 350°F (175°C). Press a slice of fresh mozzarella cheese into each cavity of a ghost silicone mold placed on a baking sheet. Bake for six minutes to soften the cheese. Remove from the oven. Press the softened mozzarella into the mold using a tart tamper, paper towel, or spoon. Use a paper towel to remove excess liquid. Allow to cool to room temperature. Remove the ghost mozzarella. Repeat with the remaining sliced mozzarella.
  2. Preheat your oven to 450°F (230°C). Line a half-sheet pan with nonstick aluminum foil.
  3. Cut the French bread diagonally into half-inch slices. Place on the prepared half-sheet pan. Brush one side with olive oil. Bake for 5 to 6 minutes, or until golden brown. Remove from the oven, turn the slices over, brush the other side with olive oil, and return to the oven for another 5 to 6 minutes until golden brown.
  4. For the dressing, add the remaining olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, Italian seasoning, and black pepper to a small jar with a lid. Secure the lid and shake to combine.
  5. Place the diced tomatoes and basil in a medium bowl. Pour the dressing over the tomatoes and basil, then toss to combine.
  6. To serve, arrange the toasted French bread slices on a serving platter. Using a slotted spoon, top each slice with the Caprese mixture. Drizzle with balsamic glaze. Place one ghost mozzarella slice on top of the Caprese mixture. Fill the eyes and mouths of the ghosts with additional balsamic glaze.
