Greek Yogurt Brownies

Ingredients
  

Wet Ingredients
  • 1 cup Vanilla Greek yogurt
  • 2 large eggs
  • 1/2 cup cane sugar or any other sugar
  • 3 tablespoons coconut oil melted, or any oil
  • 1 teaspoon vanilla extract
  • 1/3 cup almond milk or 2% milk
Dry Ingredients
  • 3/4 cup all-purpose flour or whole wheat
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
Add-ins
  • 1/2 cup dark chocolate chips reserve about 2-3 tbsp to top the brownies

Method
 

  1. In a mixing bowl, combine the Greek yogurt, eggs, sugar, coconut oil, vanilla extract, and almond milk. Whisk until smooth and creamy.
  2. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt until evenly combined.
  3. Add the dry ingredients to the wet ingredients and fold with a spatula until just combined. Do not overmix.
  4. Fold in the dark chocolate chips, reserving a few tablespoons for the top.
  5. Pour the batter into a parchment-lined 9x9 inch baking pan and spread evenly. Sprinkle the reserved chocolate chips on top.
  6. Bake at 350°F (175°C) for 22-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  7. Let the brownies cool in the pan for at least 10 minutes before slicing.

Notes

You can use plain or vanilla Greek yogurt. Coconut oil can be swapped with avocado oil or melted ghee. Use your preferred sweetener like coconut sugar or monk fruit sweetener. Whole wheat or gluten-free flour can be used instead of all-purpose. Any unsweetened milk works as a substitute for almond milk. Add espresso powder to enhance the chocolate flavor.
