Greek Yogurt Marinated Chicken Thighs

This recipe uses Greek yogurt to tenderize chicken thighs, resulting in a flavorful and moist main dish perfect for healthy meal preparation. The marinade combines yogurt with bright lemon, sharp shallots, garlic, and warm spices.

Ingredients
  

For the Marinade
  • 3/4 cup plain Greek yogurt
  • 1/4 cup olive oil
  • 3 Tablespoon apple cider vinegar
  • 1 whole lemon juiced
  • 2 whole small shallots
  • 10 cloves garlic
  • 1 Tablespoon smoked paprika
  • 1 Tablespoon dried oregano
  • 1 Tablespoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon dill weed
  • 1/2 teaspoon cayenne pepper
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
For the Chicken
  • 2 1/2 pounds boneless skinless chicken thighs

Equipment

  • Food processor
  • Zip Top Bag
  • Baking sheet

Method
 

  1. Add all of the marinade ingredients into the bowl of a large food processor.
  2. Pulse the ingredients until the mixture is smooth.
  3. Place the chicken thighs into a zip top bag. Pour the marinade over the chicken.
  4. Tightly seal the bag and massage the chicken so it is fully coated in the marinade. Marinate for 2 to 12 hours.
  5. Preheat your oven to 450 degrees Fahrenheit. Line a baking sheet with parchment paper.
  6. Place the chicken thighs in a single layer on the prepared baking sheet so they do not overlap. Shake off any excess marinade.
  7. Bake for 25 to 30 minutes. Broil on high for 2 to 3 minutes, or until the edges are slightly blackened.

Notes

The acidity in the Greek yogurt breaks down the chicken fibers, making the thighs very tender. For best results, allow the chicken to marinate for at least 4 hours. This recipe works well for meal prepping because the cooked chicken stays moist when reheated.
