Ingredients
  

For the Chicken
  • 2 large chicken breasts boneless, skinless
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Salad
  • 6 cups romaine lettuce chopped
  • 2 large hard-boiled eggs chopped
  • 4 slices bacon cooked and crumbled
  • 1 cup cherry tomatoes halved
  • 1/2 cup avocado diced
  • 1/4 cup blue cheese crumbled
For the Dressing
  • 1/3 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Method
 

  1. Preheat your grill to medium-high heat. Toss chicken breasts with olive oil, salt, and pepper.
  2. Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes, then slice or dice.
  3. While the chicken grills, prepare the dressing. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper. Chill for at least 10 minutes.
  4. Assemble the bowls. Divide chopped romaine lettuce among four bowls.
  5. Top the lettuce with grilled chicken, chopped hard-boiled eggs, crumbled bacon, halved cherry tomatoes, diced avocado, and crumbled blue cheese.
  6. Drizzle with the chilled dressing just before serving.
