- Preheat your grill to medium-high heat. Toss chicken breasts with olive oil, salt, and pepper.
- Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes, then slice or dice.
- While the chicken grills, prepare the dressing. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper. Chill for at least 10 minutes.
- Assemble the bowls. Divide chopped romaine lettuce among four bowls.
- Top the lettuce with grilled chicken, chopped hard-boiled eggs, crumbled bacon, halved cherry tomatoes, diced avocado, and crumbled blue cheese.
- Drizzle with the chilled dressing just before serving.
