Method
- Preheat your grill to medium-high heat.
- Brush the cut sides of the peaches with a little olive oil. Grill for 3-5 minutes per side, until grill marks appear and peaches are slightly softened.
- While the peaches are grilling, whisk together the olive oil, honey, lemon juice, dijon mustard, salt, and pepper in a small bowl until well combined.
- Slice the grilled peaches.
- In a large bowl, combine the mixed greens, toasted pecans, and crumbled feta cheese.
- Add the sliced grilled peaches to the salad.
- Drizzle the honey dressing over the salad and toss gently to coat.
- Serve immediately.
Notes
You can substitute other nuts like walnuts or almonds for the pecans. Goat cheese can be used instead of feta.
