Grilled Peach Salad with Honey Dressing

Ingredients
  

For the Salad
  • 4 ripe peaches halved and pitted
  • 5 oz mixed greens
  • 1/4 cup pecans toasted
  • 1/4 cup feta cheese crumbled
For the Honey Dressing
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1 tsp dijon mustard
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Equipment

  • Grill
  • Small bowl
  • Whisk
  • Large Bowl

Method
 

  1. Preheat your grill to medium-high heat.
  2. Brush the cut sides of the peaches with a little olive oil. Grill for 3-5 minutes per side, until grill marks appear and peaches are slightly softened.
  3. While the peaches are grilling, whisk together the olive oil, honey, lemon juice, dijon mustard, salt, and pepper in a small bowl until well combined.
  4. Slice the grilled peaches.
  5. In a large bowl, combine the mixed greens, toasted pecans, and crumbled feta cheese.
  6. Add the sliced grilled peaches to the salad.
  7. Drizzle the honey dressing over the salad and toss gently to coat.
  8. Serve immediately.

Notes

You can substitute other nuts like walnuts or almonds for the pecans. Goat cheese can be used instead of feta.
