Ingredients
  

For the Mushrooms
  • 4 large portobello mushrooms stems removed, gills scraped
For the Marinade
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Equipment

  • Grill
  • Small bowl
  • Basting brush

Method
 

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper. This is your marinade.
  3. Place the prepared portobello mushrooms, gill-side up, on a clean surface. Brush the marinade generously over the tops and undersides of the mushrooms.
  4. Place the marinated mushrooms directly on the preheated grill grates, gill-side down. Grill for 7-10 minutes per side, or until tender and slightly charred. Baste with any remaining marinade during the last few minutes of cooking.
  5. Remove the mushrooms from the grill and let them rest for a minute before serving.

Notes

Serve these grilled portobello mushrooms as a vegetarian main course, a side dish, or as a topping for burgers and sandwiches.
