- Portion the salmon fillets to the size you prefer.
- Pat the fish dry on all sides with a paper towel.
- Drizzle the olive oil over the salmon and rub it in to coat all sides.
- Season the fish well with salt and pepper on both sides.
- Preheat your grill to high heat, between 450°F and 550°F.
- Once the grill is hot, clean the grates with a grill brush.
- Oil the grill grates by saturating a kitchen towel with oil and wiping it across the grates using tongs.
- Place the salmon flesh side down on the grill and cook for 4 minutes without moving it.
- Gently flip the salmon using a spatula or tongs. Cook for another 2 to 3 minutes, or until the internal temperature reaches about 125°F.
- Remove the salmon from the grill. Top with melted butter and lemon juice. Let it rest for 2 to 3 minutes before serving.
