- Preheat your grill to medium-high heat.
- Thread the watermelon cubes and halloumi cubes alternately onto the skewers.
- In a small bowl, whisk together the olive oil, balsamic glaze, chopped mint, and black pepper.
- Brush the skewers with the glaze mixture.
- Grill the skewers for 3-4 minutes per side, or until the halloumi is golden brown and slightly softened, and the watermelon has grill marks.
- Remove from grill and serve immediately.
