Ingredients
  

For the Skewers
  • 1/2 medium Watermelon cut into 1-inch cubes
  • 8 oz Halloumi cheese cut into 1-inch cubes
For the Glaze
  • 2 tbsp Olive oil
  • 1 tbsp Balsamic glaze
  • 1 tbsp Fresh mint chopped
  • 1/4 tsp Black pepper freshly ground

Equipment

  • Skewers
  • Knife
  • Cutting board

Method
 

  1. Preheat your grill to medium-high heat.
  2. Thread the watermelon cubes and halloumi cubes alternately onto the skewers.
  3. In a small bowl, whisk together the olive oil, balsamic glaze, chopped mint, and black pepper.
  4. Brush the skewers with the glaze mixture.
  5. Grill the skewers for 3-4 minutes per side, or until the halloumi is golden brown and slightly softened, and the watermelon has grill marks.
  6. Remove from grill and serve immediately.

Notes

You can add other ingredients like red onion or cherry tomatoes to the skewers for extra flavor and color.
