Ground Beef Sloppy Joe Bowls with Crispy Potatoes

Ingredients
  

For the Crispy Potatoes
  • 1.5 lbs potatoes cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Sloppy Joe Beef
  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup ketchup
  • 1/4 cup water
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Toss the cubed potatoes with olive oil, salt, and pepper on a baking sheet. Spread them in a single layer.
  2. Roast the potatoes for 25-30 minutes, flipping halfway through, until they are tender and crispy.
  3. While the potatoes roast, cook the ground beef in a large skillet over medium-high heat. Break it apart with a spoon until browned. Drain off any excess grease.
  4. Add the chopped onion to the skillet with the beef and cook until softened, about 5 minutes.
  5. Stir in the minced garlic and cook for 1 minute more until fragrant.
  6. In a small bowl, whisk together the ketchup, water, brown sugar, Worcestershire sauce, Dijon mustard, chili powder, salt, and pepper.
  7. Pour the sauce mixture into the skillet with the beef and onions. Stir to combine. Bring to a simmer, then reduce heat and cook for 5-10 minutes, stirring occasionally, until the sauce has thickened.
  8. To serve, divide the crispy potatoes among four bowls. Top with the sloppy joe beef mixture.

Notes

You can add toppings like shredded cheese, sour cream, or chopped chives if desired.
