- Preheat your oven to 400°F (200°C). Toss the cubed potatoes with olive oil, salt, and pepper on a baking sheet. Spread them in a single layer.
- Roast the potatoes for 25-30 minutes, flipping halfway through, until they are tender and crispy.
- While the potatoes roast, cook the ground beef in a large skillet over medium-high heat. Break it apart with a spoon until browned. Drain off any excess grease.
- Add the chopped onion to the skillet with the beef and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- In a small bowl, whisk together the ketchup, water, brown sugar, Worcestershire sauce, Dijon mustard, chili powder, salt, and pepper.
- Pour the sauce mixture into the skillet with the beef and onions. Stir to combine. Bring to a simmer, then reduce heat and cook for 5-10 minutes, stirring occasionally, until the sauce has thickened.
- To serve, divide the crispy potatoes among four bowls. Top with the sloppy joe beef mixture.
