- Preheat your oven to 200°C (400°F) conventional heat or 180°C (350°F) fan-assisted heat. Line a baking sheet with parchment paper.
- Core the apple and dice it into small pieces. Drizzle with lemon juice and set aside.
- In a bowl, combine the oats, flour, baking powder, vanilla, cinnamon, and salt.
- Cream the softened vegan butter and sugar together using a hand mixer until fluffy. Add this mixture to the dry ingredients and briefly knead into a dough.
- Chop the walnuts. Add the chopped walnuts and diced apples to the cookie dough and gently mix them in. If the dough seems too dry, you can add a little more lemon juice or a splash of water or plant-based milk.
- Shape the dough into approximately 20 cookies. Place them on the prepared baking sheet, ensuring there is enough space between each cookie.
- Optionally, sprinkle some sugar on top. Bake in the preheated oven for about 12-15 minutes, or until golden brown.
- Let the cookies cool completely. They will be soft when they come out of the oven but will become crisp as they cool.
- Store the cookies in an airtight container or enjoy them immediately.

To make these cookies gluten-free, use a 1:1 gluten-free flour blend and gluten-free oats. Store in an airtight container. Enjoy!
