Ingredients

For the Cookies
  • 120 g Oats gluten-free oats if needed
  • 120 g Flour wheat or spelt flour, or gluten-free flour blend
  • 1 tsp Baking powder or 1/2 tsp baking soda
  • 1 tsp Ground vanilla or 1 tsp vanilla extract
  • 1 tsp Cinnamon
  • 1 pinch Salt
  • 100 g Raw cane sugar or other sugar to taste
  • 120 g Vegan butter softened, or margarine or coconut oil
  • 100 g Apple cored and diced
  • 0.5 Lemon juiced
  • 60 g Walnuts chopped

Equipment

  • Oven
  • Baking sheet
  • Parchment paper
  • Mixing bowls
  • Hand mixer

Method

  1. Preheat your oven to 200°C (400°F) conventional heat or 180°C (350°F) fan-assisted heat. Line a baking sheet with parchment paper.
  2. Core the apple and dice it into small pieces. Drizzle with lemon juice and set aside.
  3. In a bowl, combine the oats, flour, baking powder, vanilla, cinnamon, and salt.
  4. Cream the softened vegan butter and sugar together using a hand mixer until fluffy. Add this mixture to the dry ingredients and briefly knead into a dough.
  5. Chop the walnuts. Add the chopped walnuts and diced apples to the cookie dough and gently mix them in. If the dough seems too dry, you can add a little more lemon juice or a splash of water or plant-based milk.
  6. Shape the dough into approximately 20 cookies. Place them on the prepared baking sheet, ensuring there is enough space between each cookie.
  7. Optionally, sprinkle some sugar on top. Bake in the preheated oven for about 12-15 minutes, or until golden brown.
  8. Let the cookies cool completely. They will be soft when they come out of the oven but will become crisp as they cool.
  9. Store the cookies in an airtight container or enjoy them immediately.
