Ingredients
  

For the Bark
  • 1 1/2 cup almond flour
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cup chocolate chips, divided

  • Baking sheet
  • Parchment paper
  • Microwave

Method
 

  1. In a large bowl, mix together almond flour, coconut oil, maple syrup, and vanilla extract until the mixture is smooth.
  2. Fold in half of the chocolate chips into the dough mixture.
  3. Line a baking sheet with parchment paper. Spread the cookie dough mixture evenly onto the parchment paper to form the bark. You can use your hands to help spread it.
  4. Place the baking sheet with the bark into the freezer for 5 to 10 minutes to chill.
  5. While the bark is chilling, melt the remaining chocolate chips in the microwave.
  6. Pour the melted chocolate evenly over the chilled cookie dough bark. Return the baking sheet to the freezer for at least 1 hour to allow the chocolate to set.
  7. Once the bark is firm, remove it from the freezer. Cut it into pieces and enjoy your Healthy Cookie Dough Bark!

Notes

Store any leftover bark in the freezer for up to 2 months. You may want to let it thaw for a few minutes before eating.
