For the Hash Browns
  • 1 large sweet potato peeled, about 3½ cups
  • 2 tablespoons grated onion
  • 2 eggs
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon kosher salt or to taste
  • 2 tablespoons vegetable oil or as needed

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Coarsely grate the sweet potato. Place the grated potato in a bowl of cold water, swirl a few times, and then drain. Gently squeeze out excess moisture from the potatoes.
  3. In a medium bowl, combine the drained sweet potato, grated onion, eggs, flour, and salt. Season with pepper to taste.
  4. Heat the vegetable oil in a large skillet over medium heat.
  5. Scoop heaping tablespoons of the sweet potato mixture onto the hot oil. Gently flatten each scoop with a spatula.
  6. Cook for about 3-4 minutes per side, until lightly browned. Flip and cook for an additional 3-4 minutes, or until browned. Repeat with the remaining mixture.
  7. Place the browned hash browns on a baking sheet and bake for 10-12 minutes, or until cooked through.
  8. Serve warm, optionally with sour cream.

Notes
