For the Meatloaf
  • 1 lb ground chicken
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup almond flour
  • 2 cloves garlic minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Glaze
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar substitute

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a loaf pan.
  2. In a large bowl, combine the ground chicken, Parmesan cheese, egg, almond flour, minced garlic, Italian seasoning, salt, and pepper. Mix gently until just combined. Avoid overmixing.
  3. Press the mixture evenly into the prepared loaf pan.
  4. In a small bowl, whisk together the glaze ingredients: ketchup, Worcestershire sauce, and brown sugar substitute.
  5. Spread the glaze evenly over the top of the meatloaf.
  6. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C) and the glaze is caramelized.
  7. Let the meatloaf rest in the pan for 10 minutes before slicing and serving. This helps it hold its shape.
