Loaded Baked Potatoes (Bar Night)

Ingredients
  

For the Baked Potatoes
  • 4 Potatoes (russet, sweet, or white)
  • 2 tbsp Cooking oil
  • 1 tsp Salt
  • 1 tsp Pepper
For the Toppings Bar
  • 1 stick Salted butter sliced
  • 1 cup Sour cream
  • 1 cup Shredded cheddar cheese
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Chopped fresh chives
  • 1 cup Sautéed sliced mushrooms
  • 1 cup Crumbled crispy bacon
  • 1/2 cup Cherry tomatoes halved
  • 1 medium Avocado sliced
  • 1 can Chili

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. Scrub the potatoes clean and pat them dry. Rub them with cooking oil, salt, and pepper. Pierce them all over with a fork.
  3. Wrap each potato in foil. Place the potatoes directly on the oven racks or on a foil-lined baking sheet. Bake for 50 to 60 minutes, turning them every 20 minutes.
  4. Prepare your toppings by placing the butter, sour cream, cheeses, chives, mushrooms, bacon, tomatoes, avocado, and chili into separate small bowls or plates. Arrange these on your serving board.
  5. Cut the baked potatoes in half and place them on the board with the toppings.
  6. Serve with additional salt, pepper, and your favorite seasonings on the side.

Notes

This recipe is easily adaptable to different dietary needs. For a keto-friendly version, omit high-carb toppings like chili and consider adding extra cheese, bacon, and avocado.
