Mediterranean Pasta Salad Jars

Ingredients
  

For the Salad
  • 8 ounces Pasta such as rotini or farfalle
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1/2 cup Red onion finely chopped
  • 1/2 cup Kalamata olives pitted and halved
  • 1/4 cup Feta cheese crumbled
For the Dressing
  • 1/4 cup Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Garlic powder
  • Salt to taste Salt
  • Black pepper to taste Black pepper

Equipment

  • Large pot
  • colander
  • Large Bowl
  • Mason jars

Method
 

  1. Cook pasta according to package directions. Drain and rinse with cold water. Transfer to a large bowl.
  2. Add halved cherry tomatoes, diced cucumber, chopped red onion, Kalamata olives, and crumbled feta cheese to the bowl with the pasta.
  3. In a small bowl, whisk together olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper for the dressing.
  4. Pour the dressing over the pasta and vegetables. Toss gently to combine.
  5. Divide the pasta salad evenly among four mason jars. Seal tightly.
  6. Refrigerate until ready to serve. Shake the jar well before eating.

Notes

You can add grilled chicken or chickpeas for extra protein. Other vegetables like bell peppers or artichoke hearts also work well.
