Method
- Cook pasta according to package directions. Drain and rinse with cold water. Transfer to a large bowl.
- Add halved cherry tomatoes, diced cucumber, chopped red onion, Kalamata olives, and crumbled feta cheese to the bowl with the pasta.
- In a small bowl, whisk together olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper for the dressing.
- Pour the dressing over the pasta and vegetables. Toss gently to combine.
- Divide the pasta salad evenly among four mason jars. Seal tightly.
- Refrigerate until ready to serve. Shake the jar well before eating.
Notes
You can add grilled chicken or chickpeas for extra protein. Other vegetables like bell peppers or artichoke hearts also work well.
