For the Topping
  • 2/3 cup Mayonnaise
  • 1/2 cup Finely grated Parmesan cheese (about 2 ounces)
  • 1 teaspoon Garlic powder
For the Chicken
  • 2 large Boneless skinless chicken breasts (about 1 1/2 pounds total)
  • 1 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
For Garnish
  • 1 Chopped fresh parsley leaves (optional)

Equipment

  • 9x13-inch broiler-safe baking dish
  • Instant read thermometer

Method
 

  1. Heat your oven to 375°F.
  2. In a small bowl, stir together the mayonnaise, grated Parmesan cheese, and garlic powder.
  3. Cut the chicken breasts in half horizontally to create 4 pieces. Pat them dry with paper towels. Season all sides with kosher salt and black pepper.
  4. Arrange the chicken in a single layer in a 9x13-inch broiler-safe baking dish. Spread the mayonnaise mixture evenly over the chicken.
  5. Bake for 20 to 25 minutes, or until the chicken is cooked through and reaches an internal temperature of at least 165°F.
  6. Set your oven to broil. Broil for 2 to 3 minutes, until the topping is golden-brown.

Notes

Garnish with fresh parsley before serving, if desired.
